As I shared in my Meet the Team blog post, one of my favorite tasks is food science. There’s something endlessly fascinating about uncovering the why behind the magic of cooking. When I joined Tonja’s Toffee, I dove headfirst into a food science book, spending my evenings geeking out over the chemistry of all the interactions that happen while cooking up a pot of toffee. Heat transforming sugar molecules? That’s science. The perfect balance of fat and sugar for that signature crunch? Science. Every recipe we create? Pure, delicious science!
After learning about the intricacies of toffee making I was ready to dive into something my team had been asking for. Tonja’s classic recipe that consistently cooks up delicious toffee was developed from a family recipe and many years of tried and true food science.

But my team has innovators, out-of-the-box-thinkers, dream it and make it happen people and they were asking for something new. They wanted to push the boundaries and envisioned a game changer for toffee lovers and candy connoisseurs alike.

The journey from idea to reality has been nothing short of momentous. Our toffee kitchen has seen a few new ingredients, and there have been laughter-filled taste tests gone awry! We tested, tasted and tweaked until we knew we had created something that would make our team’s eyes light up and your taste buds dance.
