We've assembled a few easy recipes that are perfect for a Mother's Day breakfast-for-dinner celebration.  No special equipment, just assemble and serve.  Depending on the age and abilities of your kids, you could assign one recipe per child or group of children and have dinner on the table in no time!

  1. Whipped Ricotta Toast with Dark Chocolate Toffee and Syrup:  Creamy, sweet, and satisfying, this is a sophisticated yet simple dish that will leave your mother speechless.  (recipe below)

The Star of the Show:

Whipped Ricotta Toast with Dark Chocolate Toffee and Syrup

This recipe offers a lovely balance of creamy, slightly tangy ricotta, crunchy, sweet toffee, and a hint of rich chocolate. It's surprisingly easy to make and feels like a special treat.

Yields: Approximately 4 servings Prep time: 10 minutes

Ingredients:

  • 1 ½ cups whole milk ricotta cheese
  • 2 tablespoons heavy whipping cream
  • 1 cup Dark Chocolate Almond Toffee, roughly chopped
  • Dark Chocolate Syrup
  • 4-6 slices sourdough bread, toasted to your preference

Instructions:

  1. Whip the Ricotta: Combine the whole milk ricotta cheese and heavy whipping cream.  Using a whisk, electric hand mixer, or blender to whip the ricotta and cream together until the mixture is light, airy, and smooth. About 1 minute or a bit longer by hand.
  2. Fold in Toffee: Gently fold the roughly chopped Dark Chocolate Almond Toffee into the whipped ricotta mixture. Reserve a small amount of toffee for topping, if desired.
  3. Add Chocolate Syrup:  Fancy:  Put 1/2 cup of the ricotta mixture into a piping bag (or a zipper bag works great too!) followed by a drizzle of syrup.  Repeat until all the ricotta mixture is in the bag.  The syrup will add a touch of sweetness and chocolate flavor. Simple:  If you don't want to hassle the bag, spoon it on the toast and serve with a drizzle of the dark chocolate syrup.  Boom, bang, done. 
  4.  Assemble the Toast: Toast the sourdough bread to taste and pipe mixture onto the toast. 
  5. Garnish and Serve: Drizzle with additional Dark Chocolate Syrup, if desired. Sprinkle the reserved chopped toffee over the top for extra texture and visual appeal.
  6. Enjoy Immediately: Serve the Whipped Ricotta Toast with Dark Chocolate Toffee right away for the best taste and texture.

The Most Important Part: Clean Up!

Seriously, this is key. After all the fun, the best gift you can give Mom is a clean kitchen. Load up the dishwasher, wipe down the counters, and put everything away. A little effort goes a long way.
